          1. Peel, core and dice the apples into small, approximately ¼-inch pieces. Add the apples, butter, brown sugar, cinnamon, nutmeg, salt and fresh lemon juice to a large saucepan or deep skillet.

          2. Cook over medium heat, stirring occasionally until the butter and sugar have melted and the mixture comes to a gentle simmer. Reduce the heat to medium-low and simmer for about 5 minutes, stirring occasionally, until the apples begin to soften but still hold their shape.

          3. Meanwhile, whisk together the cornstarch and water in a small bowl until completely smooth. Slowly pour the slurry into the simmering apple mixture, stirring well to incorporate.

          4. Allow the filling to return to a gentle simmer and cook for an additional 2-3 minutes, stirring frequently, until the juices have thickened and become glossy and the apples are tender but still hold their shape. Be careful not to overcook- you want distinct pieces of apple rather than a soft, applesauce-like filling.

          5. Remove from the heat and allow the filling to cool. Transfer to an airtight container and refrigerate until completely chilled, preferably overnight, before assembling the cinnamon rolls.

          6. The Spiced Apple Filling can be prepared ahead and stored, covered, in the refrigerator for up to 5 days.
